Configure cookie name "payload-token"

Would be really nice if we could configure the "payload-token" cookie name completely since there are hosting providers like Firebase Hosting which only pass on the "__session" cookie in GET requests to the cloudrun service in the background.

In most next applications we use firebase hosting as a cheap and easy to configure load balancer in front of the cloudrun service but when using payload we have to configure a more complicated google load balancer which makes spinning up apps more difficult.
