How Payload sync with MongoDB and S3?

Hello,

I want to use Payload with my MongoDB Database and S3 object storage but what if I delete some docs in MongoDB and files from S3 Storage from another GUI then Payload, Do Payload sync them automatically?

Also if I use Payload on already running MongoDB database, Do all my docs of MongoDB will be there in Payload?
