Inquiry about Deployment on Vercel and Concerns about next-payload

Hi folks 👋,

I'm currently exploring deployment options for a project and considering Vercel as a platform. I've come across the next-payload package, and while it seems promising, I'm curious about its production readiness and long-term support, especially given the upcoming release of Payload 3.0 as mentioned in the Payload 2024 roadmap.

Specifically, I'm concerned about how easily I could migrate from next-payload to Payload 3.0. Is it a safer bet to use an Express server and deploy elsewhere, or does the convenience of next-payload on Vercel outweigh potential migration challenges?
