Consider renaming checkbox type to Boolean or similar

I believe Payload has some great potential for various use cases and API implementations built on top of it besides website content, where the visual concept of a Checkbox would not matter at all, a Boolean however would a lot. Wether that is rendered as Checkbox or toggle or anything else should be decoupled from the type of field it is.
