groupBy() for every day between a range of dates

Is it possible to do a custom groupBy() to group this data for every day between a range of dates or is there a better approach to the problem below?

I'm trying to transform JSON that looks similar to the sample below for use in a data visualization that displays a count of available programs within a defined period.
