PMM-10292 Remove unused collector (#547)

Server status collector was not used in MongoDB exporter. However, it had tests which were triggered as part of CI pipeline. Tests for it were failing, blocking any change from being merged. Since collector logic was not used, this patch removes functionality from exporter.
