Add an ENV variable to specify the "host name"

Add an environment variable to insert in the topology.xml / configuration and that defines at which address Petals is reachable. If not specified, try to guess it by using the host's configuration. In a stand-alone Docker use case, this is not really useful. But it is in K8s clusters.
