Auto-update sourcegraph docker-compose version

Currently hard-coded to 4.1; would like to figure out how to find the most recent release version instead of needing to manage it manually. could use `git` commands and filter/sort, but that seems prone to breakage. Might be a way to check a web page and grab the version.
