enhancement: add option to `gt_plt_bar_stack` to hide numeric values in bars

I really like the work you are doing here!

Just one feature request. Could we introduce a flag into e.g. gt_plt_bar_stack along the lines of show_values:bool=True that if set to False hides the values in the bars and only plots the bars?

To provide an example, I hacked this into my table:

I implemented this by adding a flag include_labels into gt_plt_bar_stack and only add labels if demanded:

In this case the approach I've used is to set font_size=0, which effectively hides the labels.

But I do think you've found overarching issue with the codebase, which is a pretty significant amount of inconsistency in different plots. If you still have interest in opening a PR I would say one of two things could change:

1. The documentation could better reflect this font_size=0 behavior for this particular function.
2. The show_labels= parameter could be made to be universal across relevant functions, which I neglected to do as I wrote the library.

No pressure to open a PR, but I'd be happy to review one if you do decide to!

I am happy to split this into two parts.

1. Just adding documentation regarding font_size=0.
2. Thinking more holistically how to approach this.

Regarding 2)

I saw that gt_plt_bar_pct uses labels as a boolean parameter to determine whether or not to show the numeric values. However, for gt_plt_bar_stack, labels is the list of strings with the category names, not the numeric values. Then gt_plt_bar has show_labels.

I could think about how to unify this and which naming is commonly used in other packages.

This will likely take a while but I'd love to contribute!
