When using the data viewer to pre view .csv, support more formats (i.e separators)

I am not really sure if its only that I have not found a way to do it or is not supported. But it would be awesome for the built-in data viewer to support arbitrary delimiters / separators when pre viewing files such tsv, csv, csv2, etc ...

I believe this is the same as #6733, which has been fixed as of https://github.com/posit-dev/positron/releases/tag/2025.04.0-109 for pipes, tabs, etc. Can you download that release and see if your issue is resolved? If not, it would be helpful to know more specifics about what kind of file you are looking to open.

I have just installed the latest release (#173 atm) and it correctly identifies .csv files using ; as separator. (Which is the most common separator when saving a .csv from Excel when Spanish is the default Windows language).
