Refactor Update-PesterTest for simpler file handling

Streamlined Update-PesterTest by removing unused parameters (First, Skip, Limit) and simplifying input processing. The function now directly collects and validates test files, passing all AI tool parameters through to Invoke-AITool. Documentation and examples were updated to reflect the new, thinner wrapper approach.
