Using pixi as an option to build PyBaMM

Are there any ongoing efforts to adopt Pixi for infra (tests, builds, CI, etc)? It might be worth the effort. See: https://pixi.sh/latest/

This looks like more of a development question and is a nice suggestion @prady0t – I'll move it to an issue. It would be nice to experiment with the Python build backend for pixi (some work will be required with the C and C++ backends for SuiteSparse and SUNDIALS). I'll convert it to a GitHub issue.
