Version Picker in Docs

Description

Is there a way to pick the version in the docs? It's always out fo sync for me. Also, y'all are releasing stuff so quickly (awesome btw), that I'm finding myself reading docs in the github, which isn't as nice to use or navigate.

Should be low hanging fruit. Happy to knock this out.

@nwcell That would be great! But I recall that we had some trouble before with the picker on https://docs.pydantic.dev/latest/, so it may not be as easy as it looks? @Viicos should know more.

Setting up versioning is a bit tedious with mike, but I don't remember having some issues with the picker. However, I remember discussing this a while ago, and iirc we decided to not add versioning for pAI docs. Maybe this can change now, but @samuelcolvin was the one having most opinions on this.

I talked about this with Samuel, and these are our requirements:

• We block all but the latest release from appearing in search results - like we do on pydantic.
• The version picker should list the last 10 versions followed by an "Older versions" link
• The "Older versions" page should link to all versioned docs
