Complete thinking.md documentation with AWS Bedrock examples

I found out that the Bedrock section in the thinking documentation is empty.
AWS also lacks good documentation on configuring additional parameters for models.

So I have added examples for all models that support reasoning on AWS Bedrock so far. I tested every example locally.
