I think CMU's Tetrad lets you do what you're describing: Parametric and Instantiated Models How much does that seem like what you want @quinn-dougherty?

Tetrad is a neat project, although I'd much prefer a plain text alternative like Squiggle if it could do DAG's and ingest data like Tetrad can. See also example workflow and the manual.
