Properties configured with @ConfigProperty are overridable at runtime by default.

For example:

   @ConfigProperty(name="greeting")
   String greeting;

And then set the GREETING environment variable before you run your app:

GREETING=Ciao java -jar ./target/quarkus-app/quarkus-run.jar
