Ksqldb java client

Hello there,
I'm playing around with ksqldb in general and java client library developed by Confluent in particular.
I have developed a demo web application with spring boot. A rest service retrieves all the records recorded in a ksqldb stream linked to a kafka avro topic.
Everything works fine. This pretty simple project is hosted on github in a public repository https://github.com/theseeker58/ksqldb-spring-boot-demo.
First I tried to develop the same demo using Quarkus (that I like more); the application is hosted on https://github.com/theseeker58/ksqldb-quarkus-demo and
starts without errors, but when I call the rest endpoint I get the following exception.

Please, I'd like to know if I'm making any mistake (e.g. missing dependencies) or it's a bug or some conflicts with resteasy which can be prevented using exclusions in the pom file.
Any help?

P.S. The README.md files of both projects contain instructions for generating sample data to publish to the kafka topic and finally to the ksqldb stream
