Feature request: support JATS license like pandoc

With the attached qmd file license.qmd.txt I can do the following:

quarto pandoc license.qmd --from markdown -s --to jats 2> good.xml

but the following

quarto render license.qmd --to jats

fails with

ERROR: Validation of YAML front matter failed.
ERROR: In file license.qmd
(line 7, column 3 through line 11, column 26) Key license has value type: open-access

That's with quarter version 1.1.251.

The documentation of pandoc described the license key while the quarto JATS ref does not list support for this license key.

This is a great request- today we accept a simple string and for some specific Creative Common licenses we automatically generate relevant additional metadata, but I think it would be great to permit you to provide that metadata (and to be consistent with what Pandoc allows). I'm transferrin this to an issue to track it.
