Share setup chunk across a quarto website

Hello,
Is it possible to allow all pages to share a common setup chunk? I would like to apply the following setup chunk to all pages without the need to copy it to each qmd file.

The recommended solution is to put this in a file (say, _setup.md), and then use the include shortcode at every page:

knitr options could also be set globally in _quarto.yml.

Is it possible to extend this further to include an R function? Can I define the version of conda environment to be used in the _quarto.yml file (e.g. using reticulate or alike)?

Using hooks options probably, but the function will be executed for each code cells which does not seem to be the brightest idea.
