Change formatting of chapter and subsection headers in documentclass:book

I wrote my dissertation in quarto and loved it! Now I am working on modifying the rendered pdf to conform to my universities requirements. I have 90% of the issues figured out but one...

I am using the documentclass: book for my dissertation since it allows for the correct numbering for the preliminaries in the dissertation. However I need the default chapter headers and subheadings to be centered, bolded, and the same font size are the rest of the document.

Here is the _quarto.yml for the dissertation:

Thanks for pointing me to that source. That did the trick. I ended up using a combination of \usepackage{titlesec} and \usepackage{sectsty}

All I need to do is figure out how to remove the extra line in the Paper 1 title and the empty lines before it.
