This relaxes the requirement on Node version for 0.81 to be Node 20 (which is currently in LTS):

@cortinico @huntie @robhogan is anyone working on lowering the minimum version in Metro accordingly? Currently on the release branch, even with this pick, we'll effectively require Node v22 because of Metro.

@huntie I'm removing this from RC2 so we can get the Metro pieces ready for RC3 (and also cherry-pick the CI fix from @cortinico, which might have caught the RN/Metro inconsistency earlier: facebook/react-native#52737)

It's the first I've heard of it, but I'll do that for Metro 0.83.1
