Create Folder for OpenCV Projects and Expand Documentation

Please create a new folder dedicated to OpenCV projects in the repository. Additionally, the documentation for existing projects, such as Virtual Painter and Gait Recognition, needs to be expanded with more detailed information. This will help users better understand these projects and how to work with them.
