Update @remix-run/eslint-config to use the latest versions of @typescript-eslint/eslint-plugin to avoid conflicts.

As of today this package is using and old version:
https://www.npmjs.com/package/@remix-run/eslint-config/v/2.16.2?activeTab=code

Which creates many problems with other eslint plugins.

Please update this version and keep it up to date to avoid conflicts with other plugins
