tests: update rich-click to latest by fixing the UT stderr handling output

It is required since PR #816

it requires fixing the UT to according with the new 1.8.8 version of rich-click, see https://github.com/ewels/rich-click/releases/tag/v1.8.8

We need to handle properly the errors/output from the stderr handling from ewels/rich-click#164
