Expose workflow retention as configuration option

It seems we only expose idempotencyretention, not workflow retention.
Maybe we need different configurators depending on service type?

The workflow retention can currently be set on the workflow handler, as follows:

    Endpoint endpoint =
        Endpoint.builder()
            .bind(
                new LoanWorkflow(),
                conf ->
                    conf.configureHandler(
                        "run", confh -> confh.workflowRetention(Duration.ofDays(10))))
            .build();

This is fine for now, I think the next step there is the annotation on the workflow itself...

In theory yes, but in practice we can't type check that in some overload of bind, because the Object you pass through at compile time doesn't have a known "restate service type".
