Change the default configuration to have numerical viscosity turned on?

It looks like numerical viscosity is not turned in the default configuration. This seems counter-intuitive to me, as it should help stabilize simulations. What is the reason?

Additionally, we should update the beam heating configuration example to turn it on. It certainly should help with stability issues in flare simulations.

Good question. I have no idea why it isn't the default. 😅

I'll defer to you if you think it should be the default in both configurations.

Not sure if you saw my earlier message...
