Add support for Waveshare ESP32-S3-Touch-LCD-2.8

Seems to be a nicer version of the OG CYD.

Unfortunately after months of using the CYD personally I have decided to part ways with it due to quality concerns around the power button when on battery power. Frequently they are unusable. I am hoping this waveshare product will fix those issues.

I haven't received mine yet, but any tips on how to add support for this?

Looks like we need the CST328 driver for the touch and also the esp32-s3touchlcd2p8.json
It should be able to use the already existing ST7789_SPI screen driver with the correct config in the json

UPDATE: We got the st7789 driver working. So the screen displays. So now we are working on the touch driver.

Okay I have the touch working. It's not totally finished yet, and also the colors are wonky on the screen, but this is a mostly functional implementation for this waveshare 2.8 board
