New log lines at start up about configuration

It would be useful to add some log lines at start up that shows info regarding the configuration that is loaded.
This is mainly to be double check that we are using the right values to have expected results

Example of some configuration values:
HTTP_TIMEOUT
AMQP_PREFETCH_MESSAGES
DB_HEALTH_CHECK_TIMEOUT
