Here's a comment which isn't that important in this particular case, but is part of a general principle we need to do better at. To me, changing the color for a project feels significantly more "laborious" than with compute servers, because you have to:

1. click on a very wide (but weirdly thin) button,
2. wait for a modal to animate up
3. move your mouse to the other side or top of the screen where the modal is
4. click on the color
5. click on the "Select" button, which is perhaps unusual: maybe just call that button "OK" (the default), or get rid of it (see below).

For a compute server the whole process seems simpler:

1. click on the color which is already there
2. immediately click on the new color you want in the popup that appears directly attached to the color.

I think every project should have a color you can see, for simplicity. It just adds complexity having this idea of a transparent color and a state where you do have a color or not. It simplifies the UI and mental model for users to just have a color right there you click on. Just make the popup appear right there and make the color be set when you click on it. It should be 2 clicks to change the color.

This doesn't matter so much for projects, since the color rarely changes. However, if we add a color option for Jupyter notebook cells (and I hope we do), then making things simple becomes more important.
