Coil sunset? #7

I'm looking into using this plugin, but I first have a question that is unclear:
The documentation says the current only compatible server is Coil, but that has ceased to exist. What is the current service and is it also available to users that don't have a crypto wallet? I've found in this blog that interledger is meant to also support fiat currency, but is that already possible now?
