Refactor to use 'uv' for generated projects #558
Description
uv is superior and faster than poetry so use this instead. perhaps offer a poetry as alternative?
really, need to rewrite the generation code to NOT use hardcoded pyproject.toml files but instead run the manager init and add commands dynamically. This will make keeping generated library versions up to date much easier
