[bug]: commitizen seems to update based on a pattern

Steps to reproduce

See seedcase-project/seedcase-sprout@5bfe3f6

Commitizen was supposed to only update our version, but also updated ruff and quartodoc...

Expected result

Commitizen should only update our version.

Actual result (the bug)

But the version pattern gets updated.

I think it is related to poetry updating to 2.0.0... Which now supports https://peps.python.org/pep-0621/.

I think doing #41 will solve this problem, or updating Poetry and the pyproject to match PEP621.

I think with the move to uv and using PEP621, this hasn't happened again.
