fix: add explicit node-gyp-build install script to prevent npm auto-detection

- npm was auto-detecting binding.gyp and adding 'node-gyp rebuild' install script - explicitly add 'node-gyp-build' to use ONLY prebuilt binaries - never build from source on target machines
