fix: configure prebuildify to create node-gyp-build compatible prebuilds

- Add prebuildify script with --name node.napi flag
- Update bindings/node/index.js to reference node.napi.node
- This fixes installation failures where node-gyp-build couldn't find
  prebuilds and tried to build from source (requiring build tools)
- Bump version for new release
