Why does upsnap need an email?

I understand needing a username and password, I don't understand the need to put my email into something that's local to my network either way.

Correct. UpSnap is build with pocketbase which requires an email for admin login. The reason behind that is that pocketbase can send emails to notify admins about stuff happening on the backend. I do not use any email notifications but the requirement is still there.
