Proper convert `Atom` (as gRPC string) to HE's `Atom` type

We currently convert all DAS Atom to Atom::Symbol() before returning upstream:
rust_metta_bus_client/src/helpers/query_answer.rs#L145-L155

We must use a proper parser before returning them.
