Description of changes
Removes the existing OpenTelemetry-Swift integration from the project.
Instead, it will be published via a separate Swift package that is to be established soon.
This is a breaking change because it removes the OpenTelemetry feature from the project in favor of a modular version. Customer messaging plus a transition period will be provided before this PR merges.
