Logging of Params

Hi @ioquatix,

thx for making this gem available as a quick drop in for nice structured logging in rails using falcon.

As this gem is specifically made for Rails the standard behavior in Rails is to log filtered params afaik.
This gem completely removes params lib/console/adapter/rails/action_controller.rb wich might be overly cautions.

Wouldn't it make sense to at least offer a means to toggle params logging on and off?

Let me know what you think and what direction makes sense to you.
I can create a PR if you agree that it makes sense.

Yeah, I'd be fine with that, I mostly made this for our requirements at the time but happy to expand it. I heard Rails is planning to introduce structured logging so maybe we can also hook into that in the future. Please submit a PR :)
