Implement logging to track progress of functions

At least locally, implementing logging to track progress of functions can aid in debugging. If logging can be implemented while using GitHub Actions as well, that would contribute to debugging issues therein.

Im not entirely sure logging would really be beneficial to be honest. The scripts all print to the terminal and I think using a log file would just be a little more cumbersome. Additionally, the stdout information is accessible from the github action via the website so I dont think theres really much of a need to implement logging at the moment.
