List of useful libraries with descriptions, like Gill, Kite, Seahorse #622

Hello all. With the release of GIll and Kite, I think it would be valuable to highlight these newer or otherwise lesser known libraries (like Seahorse for Python) out there that can be used to interact with Solana. Perhaps a quick description and a link to the official documentation would suffice!
It could be useful to dive into these libraries but I think the documentation for these is good enough on their own, unless someone disagrees.
Please let me know if this makes sense / what other libraries to mention. If this gains support I will implement
