Add Prometheus support

Add Prometheus support

The official Prometheus Exporter Plugin for OpenSearch is now compatible with OpenSearch 3.x. It should be used to provide metrics. The metrics port should be configured equally to the other Stackable products.

It should be checked if the Elasticsearch Exporter is still useful. If not, it should be removed it it is already added somewhere.
