Feature - Fix up Emily's logs

1. Description

Emily's logs have some problems. Here are some of them, in no particular order:

1. They are not so pleasant on the eyes.
2. There aren't enough logs.
3. Our existing logs don't include enough information.

Ideally, we would be able to know who the sender was if the sender was a signer, but that might require a change to the signers as well.

2. Technical Details

2.1 Acceptance Criteria

• Emily's logs are easier to see, and visually parse.
• We can track concurrently handled requests through our logs.
• We have more information in our logs.
