Rename the backend to StapiTleBackend #3
Description
We might want to rename everything from StapiMockBackend and mock:product to StapiTleBackend and tle:product. This will be in-line with other backends and is a little closer to the business value of this backend (rather than the technical explanation for what it is).
If this is the route we go, let's also be sure to update the curl in the README and any associated documentation.
