Add table showing and explaining configuration values

We should add a table in the documentation to list all the configurable values, explain what they do and show the default values.

PR #70 contains the tables for almost all values. @stefanDeveloper: Please add the information in the configuration tables for the Data Inspection and Data Analysis stages. With these tables filled, the issue is complete.
