chore: standarize test scripts to always run non-interactive (#485)

Standardize all `test` scripts to always run non-interactively (`vitest
run`),

Multiple packages used bare `vitest` for their `test` script, which
enters interactive watch mode in a terminal, blocking local runs. Others
split into `test:unit` (watch) and `test:unit:ci` (run), with `test`
referencing (or not) `test:unit:ci`.

Aside from being inconsistent, this made `pnpm nx run-many
--target=test` hanging locally due to watch mode.

### Solution

Now every package follows the same convention:

"test": "vitest run"          # always exits, safe for Nx/CI/local
```

If anyone wants to run on watch mode, they can run `pnpm vitest`
directly in the package directory. No need for another script.
