I'm using the official demo.

Hmm, thanks. Can you also share the output of pnpm tauri info please?

Also, is E:\ an external (fat32/exfat) drive? Is there anything "special" about your C:/Users/username/AppData directory/location? Can't really think of anything other than it being symlinked or something idk.
