Hi, can you explain to me how to set up user agents please, I'm going crazy

Sounds like tauri-apps/plugins-workspace#966, it's the browser removing it from the object before it sends it to the backend :/
In v2 there was a workaround to send the headers as a 2 dimensional array but the v1 backend doesn't support that.

Feel free to create an actual issue asking for a backport, but no promises for that to actually be worked on (unless of course someone contributes it)
