Update version


Summary by cubic

Bump Telemetry Forge Agent and Fluent Bit to 26.2.1 across Dockerfiles, setup scripts, CMake, and test scripts. Ensures CI builds and tests the latest release.

Written for commit b91e838. Summary will update on new commits.
