[Enhancement]: Use new moby/moby/client package

Proposal

Hello, the current versions are using the docker/docker package but a new moby/moby/client package is now being published, as well as moby/moby/api for the common types.

Would it be possible to switch to these packages ? They will remove a lot of docker engine dependencies.

@acouvreur we are planning to use docker/go-sdk instead, and this package will use moby/moby under the hood
