What happens when a field is added/removed from the schema?

When we change the schema, we run the bootstrap script then re-run pgsync as said on the readme. But what happens in the background?

• Is the elasticsearch index deleted? Under which circumstances?
• Is the new index built first, or is there some downtime between the old one being deleted and then it getting re-created?
• How does pgsync know to rebuild the index or not?
